Lismore biscuits started in 2014, by three ‘biscuiteers’ Beth-Anne Smith and Ken and Owen Madden. While officially only in business for 5 years, in business, Ken says that have all three of them have food in their DNA, with their families being involved in fo
od businesses for over 200 years. He believes it’s their ambition and experience that has allowed them to create such special and high-quality products, loved and enjoyed by people all around the world. The simplicity of their fine, sweet biscuit range and the purity of their ingredients is what Ken values the most in the business. Ireland has a growing small food business sector, who are always willing to share their knowledge, experience and stories with other producers, an aspect of the job Ken and the team always enjoy.
The Lismore Food Company biscuit range includes their All Butter Irish Shortbread, Caraway with Irish Seaweed, Dark Chocolate and Cardamom, Lemon Polenta, and Irish Digestives with Atlantic Sea Salt. The biscuits have won numerous awards including Great Taste. The taste is attributed to the quality ingredients that the company carefully source. What makes these biscuits even more special is the beautiful orange and gold tubes packaging that encases them, representing their quality, taste and flavour.
The Lismore Food Company use Achill Island Sea salt in their Irish Digestives, they chose this salt for its taste and texture, that works so well with the biscuit and say ‘Turning the idea of a digestive biscuit into something Irish with sea salt from Achill Island on Ireland's rugged West Coast was a lot of fun’. Ken tells us that working with Irish producers is always an important consideration especially when the quality is extraordinary, the provenance is so completely authentic, and the story of the people involved.
The Wild Atlantic Digestives are a perfect combination of sweet and salty. We love them with a coffee in the afternoon, but one of our favourite ways to enjoy these delicate biscuits is served with a cheese board and our sweet and smoked chilli relish made with Achill Island Smoked Sea Salt, check out the recipe over on our recipe page.
