Salty Coconut & Tahini Bites
There almost fudge like and a great better for you treat. They last in the fridge for a couple of days too.
Makes about 15-20
Ingredients
- 90g of pitted dates
- 100g of tahini, light or dark
- 2 tbsp coconut oil
- 40g desiccated coconut
- Achill Island Sea Salt flakes
Method
- Lina a small baking tray, roughly 11cm x 17cm with greaseproof paper.
- Add the dates, tahini, coconut oil, 30g of dessicated coconut and a pinch of sea salt to a food processer and blend to a smooth thick paste.
- Transfet to the lined tray and press down on the mixture evenly.
- Sprinkle over the remaining coconut and place in the fridge for 30 minutes.
- Eat chilled and serve with a sprinkle of Achill Island Sea Salt flakes on top.
Tip: these are also delicious with melted chocolate drizzled over them. Do this just before they go in the fridge.
