Salted Caramel Energy Balls by Roberta Harrington

A quick and easy snack that are perfect for the elevenses! Shared by Roberta Harington on her instagram page, these energy balls are topped with Achill Island Sea Salt to create that delicious slated caramel flavour that we love! Ingredients (Makes 10 balls)
  • 8 medjool dates (pits removed)
  • 1 cup cashews
  • 1 tsp vanilla essence
  • 1 tbsp peanut/cashew/almond butter
  • 2 tbsp cacao nibs
  • 1 tbsp honey/maple
  • 30g dark chocolate melted
  • Achill Island Sea Salt

Method: 

  1. Preheat the oven to 180 degrees.
  2. Spread out the cashews on a baking tray and roast them for 10 minutes or so (brings out the flavour).
  3. To your food processor, add the dates, roasted cashews (add them when warm from the oven), nut butter, honey, vanilla and cacao nibs and blend for 2-3 minutes. Stop every 60 seconds or so to scrape down the sides. While the blade continues to turn, add in 2 tbsp water until the mixture clumps together .
  4. Roll the mixture into 10 even balls.
  5. Melt the chocolate and divide over the balls.
  6. Finish with a good sprinkle of Achill Island Sea salt.
  7. Keep in an airtight container in the fridge for up to 10 days
