Achill Island Sea Salted Chocolate Chip Cookies with The Proper Chocolate Company
Chewy, yet crispy cookies with chunks of The Proper Chocolate Company 70% Cocoa with Nibs & Achill Island Sea Salt Dark Chocolate along with subtle bursts of salty goodness from a scattering of Achill Island Salt Flakes. This cookie recipe is our favourite yet and can be whipped up in no time for a perfect little treat with a cuppa!
Ingredients:
- 120g Butter
- 100g Soft Brown Sugar
- 75g Castor Sugar
- 1 Egg
- Seeds of 1 Vanilla Pod/ 1 tsp Vanilla Extract
- 190g Plain Flour
- 1 tsp Bicarbonate of Soda
- 80g of The Proper Chocolate Company 70% Cocoa with Nibs & Achill Island Sea Salt Dark Chocolate Tablet
Method:
- Mix the butter and sugars in a bowl using an electric mixer until light and fluffy.
- Add in the vanilla and egg and beat until combined
- Mix together the flour, bicarbonate of soda and sea salt and slowly beat this into the butter, sugar and egg mixture until it is all combined.
- Chop up the chocolate into chunks and stir them into the mix until evenly distributed.
- Using your hands, roll the dough into small evenly sized balls, place on a plate in the fridge for 30 mins to chill.
- Heat the oven to 180°C and line a baking sheet.
- Space out the cookie dough balls onto the baking sheets and bake for 13 mins.
- They should be slightly soft when you take them out but will firm up once cooled. Allow them to cool on a wire tray.
- Sprinkle a few flakes of Achill Island Sea Salt on the tops before serving.
