Gooey Chocolate Brownies with Achill Island Sea Salted Caramel Fudge

Even more gooey, chewy, and fudgey than our last recipe, these chocolate brownies are so good! We've added our Achill Island Sea Salted Caramel Fudge into the brownie batter, and it caramelises in the oven making them so chewy and delicious! 

Ingredients 

  • 180g good quality chocolate -milk/dark
  • 250 g unsalted butter
  • 1 tsp vanilla extract
  • 80g quality cocoa powder
  • 65g plain flour
  • 1 teaspoon baking powder
  • 360 g caster sugar
  • 4 large free-range eggs
  • 1 tsp Achill Island Sea Salt Flakes, plus extra for finishing
  • 50g of Achill Island Sea Salted Caramel Fudge, roughly chopped.

Method

  1. Preheat the oven to 180°C. Line a 24cm square baking tin with greaseproof paper.
  2. Melt the chocolate and butter in a glass bowl over a pot of simmering water. Once melted, add the vanilla extract and leave aside to cool. 
  3. Sift the cocoa powder and flour into a separate bowl, add the baking powder, sugar, and Achill Island Sea Salt, then mix together.
  4. Add the dry ingredients to the chocolate, and mix together. 
  5. Beat the eggs, then mix in until you have a silky batter.
  6. Add in 3/4 of the Achill Island Sea Salt Caramel Fudge into the batter and mix through. 
  7. Pour the brownie mix into the baking tin. Scatter the remaining pieces of fudge on top, along with a pinch of Achill Island Sea Salt flakes.
  8. Place in the oven for around 30 minutes. You don’t want to overcook them. The brownies should be slightly springy on the outside but still gooey in the middle. They'll firm up once they cool. 
  9. Allow to cool in the tray, then carefully transfer to a large chopping board and cut into chunky squares.
